    Sapphire Rickey

    The Sapphire Rickey was created by Shoemaker's restaurant in Washington. Serve this one in a 12oz Collins with lime juice.

    Ingredients

    2 Parts BOMBAY SAPPHIRE gin
    1 Part freshly squeezed lime juice
    1 Splash sugar syrup
    Top up with soda water

    Garnish

    Lemon zest

    Instructions

    Shake first three ingredients with ice and strain into an ice-filled glass. Then top up with soda water.
