T he fat lady sang on the bygone days of the popular Mama’s restaurant leaving room for the new Hikari to appear. Hikari, which means sunlight in Japanese, is the first of its kind to grace Calgary’s soil, but it will certainly not be the last.
The new Japanese-Korean eatery is owned by the same entrepreneurs who own Ichiban Sushi, the Toronto-based chain that now runs over twenty locations across Canada. Their initial plan was to expand the Ichiban chain, but the name was already taken in Cowtown. I’m not sure what Ichiban means but Hikari sure sounds a lot more appetizing. Some things happen for a reason, I guess.
