he Hotel Georgia was the talk of Vancouver in the 1950’s and 60’s. Its Cavalier Grill was filled with Howe Street brokers, barristers, solicitors and Hollywood celebrities. It was the city’s place to be. The hotel is now undergoing a major renovation, and when it reopens, the glamour will return with a restaurant worthy of the city’s adoration. And it’ll be owned by one who actually has the finesse to pull it off – Chef David Hawksworth.
Hawksworth will leave his post as Executive Chef at Granville Street’s West at year-end to work on this new project, which has yet to be named. A state-of-the-art kitchen will rival that of Lumiere’s. The dining room will seat 120 and there will be a patio, bar and two private rooms. Look for sleek designs from Munge & Leung (they just did the newest Jean-Georges). This place won’t open until 2009, so Hawksworth fans will have a bit of a wait to dine at what’s sure to be Vancouver’s most sought-after tables. -C.A.
