o many restaurants, so little time. During this culinary renaissance of the 21st century, Toronto has emerged as one of North America's hottest dining towns – and a healthy roster of new spots are slated for opening in 2007. Familiarize yourself with global concepts, molecular gastronomy, more tapas fare, fresh faces and inspired new drinks – all to be expected in the coming months. Here's a smattering of places that you’ll find yourself at in 2007.

In mid-February, Yorkville will be a-buzz during the opening of Greg Couillard's 43-seat
Spice Room & Chutney Bar located next to the new Manyata Courtyard Café. Primed as a private dining room, the Spice Room will present edible masterpieces executed by Executive chef Couillard, while chef David Ng'Ang'a, his former kitchen accomplice at Habitat, will prepare exotic cuisine for the adventurous palette at Manyata.

The latest venture from local celebrity chef, Mark McEwan, is on the horizon. Noted for his famed Nothern 44 and Bymark restaurants,
One , scheduled to open Summer, 2007, will be the latest addition to the high class culinary Mecca that is Yorkville. In-the-know foodies will be marking this as THE social soiree of the summer. The tag team operation consists of McEwan in the galley and his wife, Roxanne, stationed at the front of house commanding the crowd of diners. The superb quality of casual cuisine combined with the architectural design of Yabu Pushelberg will appeal to all Toronto cosmopolitans.

George's Teddy Corrado (Rain, Luce) will helm the ROM's fledging eatery
ROM World Diner (Royal Ontario Museum, 100 Queen's Park), infusing it with sharp yet innovative elegance whilst still providing family placating cuisine. This exciting neoteric addition should be enough to stifle the stale grumblings from the dinosaurs still roaming the ROM (and I’m not talking about the exhibits). If you want to eat old favourites, you can always take a bite out of the displays. Serenely overlooking Philosopher's walk, the diner will offer respite from the, um, kinetic rush of the museum (sure).
