For all the precision that went into creating its glittery interior and stylistically design excess, you'd think that Watermark was a museum on the beach. And yet the menu is curiously downplayed by Chef Lynda Larouche (Brent Davies’s Teahouse). It’s a fusion of Asian and West Coast inspiration: rock-salted, crunchy shell-on garlic chili prawns, deep-fried tempura chili smelts, and the like.
A lacquered ginger duck breast, for example, is served with Asian greens and tamarind demi-glace. Pairing shaken beef with rice noodles turns out as poor as it sounds, with three ramekins of snails, although crisp and moist without being too chewy, seemed a little chalky, with bits of rind adrift on top like tiny tombstones. Instead, try the surf clam vongole, with strong flavours of garlic, chili, white wine and olive oil; or the straightforward tuna tartare that show ups flavourful and fine. Likewise, the filet of salmon is about as exotic as mains get at Watermark.
In many respects, Watermark is a more inventively executed version of previous such adaptations: it boasts an ultrasleek design and is home to one of the nicest patios in town. But be warned; on loud weekend nights, the restaurant can sometimes seem as if it is about 90 percent bar. - R.L.

5 Reader Reviews | Hubby and I went there on a Saturday night.The view was spectacular but everything else was just alright. We had 6 appies and 1 dessert to share and most were good but presented with wilted garnish. The chicken liver pate was grey on the outside and pinkish on the inside and we were not impressed at all. There's only so much dark lighting can cover up! The mussels were the size of a large pistachio nut.Way too small! The seared tuna on iceberg lettuce was surprisingly delicious and refreshig. The service was just passable. We had to flag our server to order extra wine and when we could not find him to return our lukewarm cappucino we asked a busgirl instead. It felt like once he delivered all our food, he didn't bother with us anymore until it was time to give us the bill. Also, there were so many staff working that you'd think things would be more efficiently run, but they all looked like newbies in training. The food was ok, and the service was a little under ok. With all the support staff available to our server so that all he had to do was deliver drinks and take orders, he sure did a crappy job. The busboys were the hardest workers there and I would hire them for my restaurant any day!

As a Kits local, it's hard for me to say anything bad about the service at Watermark. Simply because the owner seems to hire the most popular and hottest servers that have been let go from almost every hot spot on fourth ave.
Great place for a girls night without having to deal with a bunch of slobbering jerks who have tossed back far too many jager-bombs... unlike malones or hells kitchen.
Sexy cocktail and martini menu. Perfect spot for a fun date.
Food...meh...enough said. I'd bet the farm that the freezer is stacked with boxes of M&M meats oriental party packs.
But again, who needs a party in your mouth when you've got a covered heated patio on the beach, kick ass service, no riff raff and an endless supply of naughty beverages...

Had dinner on Friday evening. The view is amazing. The insid was just beautiful! That's about it though. The food was expensive and terrible. We ordered a caesar salad and it came in a soup bowl with very little lettuce and cost $9.95!! The rack of lamb only 4 medallion pieces with a teaspoon of mashed potato,four steamed green beans and was smothered in wasabi sauce for $34.95. Why would anyone put wasabi on lamb is a mystery. I guess if you do not know how to cook lamb you have to mask it somehow. We also had the seafood stirfry. There was maybe 6 oz of mixed seafood 2 cups of almost raw zucchini, 6 steamed green beans and a cup of white rice for $18.95. We also ordered the lobster dumplings which were actually very good but they only give you 4 pieces and charge $9.95.
The service was slow. We waited 30 minutes to get our main dishes even though it was 10:00 pm and the place was half full.
I will never go to the Watermark again. This was my first and last time. Our bill came to $96.00 for 2 people for 1 glass of wine, 1 pop, lobster dumpling appetizer, caesar salad, rack of lamb, seafood stirfry!! I can only imagine what the food cost was! We live in Kitsilano and we were looking forward to this place opening but we will never go back!!
