    Former chef to King Leopold of Belgium, Herve Martin, a French-trained chef, opened The Hermitage in 1988 after his stint at the Pan Pacific Hotel. He trained and produced fine chefs there and culminated the Hotel many coveted culinary awards.

    The elegant, but warm ambience also exudes in Martin’s classic French dishes. His restaurant holds one of the best selections of Burgundy wines in Vancouver and also includes exclusive wines from his family winery in Chamilly, France.
