 ur never-ending search for the perfect medium-rare steak brings us to Saltlik, a chain that started in Banff, then Calgary. This third Saltlik takes over the address vacated by Bruce, re-inventing the space with opulent surroundings. Luxe fittings, a huge custom chandelier, and a backlit wine-rack featuring a 1,200-bottle wall of wine accessed by rolling ladder own the space.
As downtown’s newest steakhouse, Saltlik is a cool understated space complete with seating on multiple levels. Tried and true is the best way to describe the food and the ambience here, and the menu has a deliciously familiar meat lovin’ spirit. The comfortable interior is arranged on three different dining levels and a martini lounge for lighter meals or drinks. Long tables with padded bench seating run down the center of the room, lending visual appeal.
There’s lots of beef on the menu, serious salads, and an accessible wine list; specialties include an open-grill marinated skirt steak; the braised lamb shank will leave you worn out and well satisfied; the truly righteous can chow down on the California-cut New York steak, Alaskan sablefish, the Double-fisted cheese burger or the great salad with roast duck and pecans. Or try the El Diablo caesar salad.
Prices are at peak though, compared to other local purveyors of high-end steak and ale, so bring your Gold Card and your stomach. - R.B.

Tried Saltlik in Banff on Oct.9, 2006. First impression was exciting, we were in a mood for a real steak. Atmosphere was stylish, with interesting decoration, service impeccable, prices were OK, the appetizers (crab cake and mushroom soup) were both excellent, but obviously I was coming for the "porterhouse" ordered medium to be safe and expect it medium-rare. This ended up being the biggest (and only) disapointment. At 38$, excluding the side dish, you're not forgiving if the piece is not outstanding. The cooking was barely rare (I ordered medium), how can this happen in a "steakhouse"?? and the quality/tenderness of the meat was nowhere near the best in class in that industry. My wife had the "petit filet" and had only very positive feedback. On my side, I gave up trying after half of it, the waiter saw what was happening and without asking/commenting, didn't charge for my steak. I found it nice, I didn't want to argue. I may try Saltlik again (I now see it is a chain), as everything else was super... but a bemol on the porterhouse.

I've eaten here a couple times now... Simply because my buddies seem to think it is great. I have not once been wowed by anything. Salad in a bag (need I say more) with about 1/4 of a tomato and 3 ounces of steak. I really don't see what the hype is about. Its your run of the mill overpriced, overhyped typical food restaurant in Vancouver. Service is good.

Had an unbelievable time. It was reasonably priced and the atmosphere was energetic and the waitress we had was as knowledgeable as she was cute. (very) Give it a go.
