 using their love for French/Italian cuisine, Jean Francis and Alessandra Quaglia, opened Provence, a comfortable boite in Yaletown. The predominantly seafood menu utilizes the best of what Vancouver has to offer—with fresh squid, herring and tuna. One of their specialties is the Bouillabaisse, a west coast style with fresh fish, prawns, scallops, mussels, clams, served with gruyère et la rouille ($25). The success of this restaurant has also spawned Jean and Alessandra to open another restaurant, Provence Marinaside on Davie St. and False Creek, a fresh local seafood; raw oyster bar that also has antipasti. - A.C.
