H  otel restaurants are often something of an afterthought, but at the new Shangri-La Hotel in Vancouver, everything is clearly carefully thought out, as one would expect from a five star hotel with locations worldwide. The lobby is inviting, as is the hotel bar, but so far the show stopper has been the first of two restaurants that will open on the property. I speak of MARKET, brought to us by none other than world-renowned chef, Chef Jean-Georges Vongerichten.
MARKET is Jean-Georges' first Canadian outpost; he has, of course, several restaurants in New York (including the Mercer Kitchen, Spice Market, and Matsugen,) joints in Chicago, Las Vegas, (and, for some reason) Minneapolis, as well as international representation in Shanghai, London, and Paris. His latest venture is divided into four separate areas: the café, a lounge and bar area, a formal dining room, and a patio. Architect James Cheng designed the exterior, and Box Interior Design group worked the interior into the sleek space it has become (they also designed Vancouver’s Watermark Restaurant and Whistler’s Adara Hotel). You could comfortably bring a family into the café area, snuggle in the lower lounge seats with friends or lovers, or go upscale and sup on the tasting menu in the dining room (the banquettes even have sound baffling for private conversations.)
The first few nights after opening, Jean-Georges himself could be seen flitting about the room insuring all was well. If you’ve been anywhere in Vancouver the past few years, you’ll recognize the local talent. Behind the bar is star Justin Tisdall ( Boneta, and Lumiere), and sommelier Robert Stelmachuk ( Le Crocodile); they are joined by general manager Paul Grunberg ( Chambar) on the floor.
Jean Georges admits he will only be in Vancouver two or three times a year. It will really be up to Executive Chef David Foot to run the kitchen. Foot recently returned from the Shangri-La group in China, and was previously to be seen at the Beach Side Café and Diva at the Met. The Executive Sous Chef is Wayne Harris, formerly of the Fairmont Waterfront and Lumiere. There will definitely be some culinary wannabes dropping off their resumes hoping for a chance at the stoves alongside this talent.
While I went in expecting rather steep prices, I was pleasantly surprised that one could get in and out of the place without shelling out an arm and a leg. At the lounge, raw bar and cafeteria, there’s a selection of plates that all hit under $14 (apart from the lobster and seafood platter.) The black truffle and fontina cheese pizza was hard to share with my tablemates; I wanted more. The beef tartare was traditional, but pleasantly updated with some tempura onion rings; the beet salad with okanagan goat cheese was topped with microgreens and tasty balsamic vinaigrette. Heavier appetites can try the grilled tuna burger or a proper meat burger with accompanying onion rings.

Upgrading to four stars after my last visit - I am now fully, 100% convinced of the awesome-ness that is Market. You really can't go wrong here, as long as you know what to expect (see original review). I am in LOVE with seafood platter.

I had an important dinner with out of towners which need to be perfect. I choose Market, since everyone was a cheese fan. Getting a reservation for a table for 8 was not a problem.
I absolutely loved the food. I had the special appetizer of beet soup and the risotto which was to die for. Waiter was a problem, but the sommelier saved the day. He corrected all of the waiter's mistakes and fixed everything and then some. The food was excellent all around,

The fare was nice and interesting to look at but other than that - what the heck? Very expensive and I have been to 20 - 30 restaurants where the food was better. I like good food, very good food and this was neither.

Nice play to go if you were to go on a date. Expensive and a lot of old people. Went here for corporate dinner with coworkers. Flawless is one word to describe this place. 10/10 rating.

A gorgeous space and beautiful presentation. However, the dishes are conceptually weak and tend to lack flavour, creativity and ultimately any reason to return. I have tried this place several times due to the review ratings by martiniboys.com readers, but cannot find much to like about it except the aesthetics. The prices are high and the dishes mediocre (not to mention very, very small). Most dishes overemphasize oil and salt, and cheese is involved in most courses. Worst of all, the flavour profiles in each course tend to remain the same rather than build or play off of each other. When the predominant flavors are salt and oil, it is not a good thing.

Another - even beter - thing was this pear pie-cake thing, i forget the name. Any special of Market is good.

I love Market because it makes me feel sophisticated without having to be. I can lounge by the cocktail bar while drinking a snazzy martini and talking politics... or eat an entire meal there. Love the space.

Just went to this restaurant and absolutely love it. Cozy and romantic. Love the pairing with the wine, with the 3 course meal. Very delicious. The oyster was the best I ever had. Came here with my boyfriend and we both had a great time. I will absolutely visit here again.

Perhaps my expectations were too high; having dined at Daniel Boulud's DB Bistro Moderne last week, I thought this would be an equally, if not superior, dining experience.
The warm asparagus salad starter was fantastic. The specially made vegetarian gnocchi dish was great. The jasmine-lemonade was delicious. At this point it was 5 stars... and I should have stopped.
It after the main entree where Market fell apart. I opted for a hot chocolate and the port-wine sorbet and cherries with creme-fraiche cheesecake. The hot chocolate was a mere $3... "less than Starbucks at Jean-George's?" Well, now I know why. Perhaps they ran out of actual chocolate and milk - I kid you not, it tasted like Nesquik mixed with water and non-dairy creamer.
Seriously disappointed with the chocolate milk, I moved it aside to make room for dessert. The presentation was excellent, but again it was the total lack of quality that made this dessert a terrible disappointment. The sorbet was pretty straight forward - no complaints there. The cherries were nice. The actual cheesecake? I couldn't believe my senses, but I have nothing to compare it to other than Jello non-bake cheesecake.
My dining guest had no complaints about her entree (red snapper) and dessert (banana cake) but when she tasted my hot chocolate and cheesecake she absolutely agreed with my opinion.
If you're torn between trying Vancouver's two new top chef restaurants, go to DB Bistro for a start-to-finish flawless dinner. If you go to Market, expect slower service and hit-and-miss food that may, or may not, be fantastic.

Are you kidding me? This was absolutely amazing, beyond my expectations - and I expected a lot after seeing the martiniboys.com reader reviews reviews.
Magnificent food that left my palate salivating, and a setting and service that left me feeling calm and peaceful. Just a wonderful all around experience and meal!

This place is great on someone else's expense account, but if you want better food and service, head to Yaletown or, what I think is by far the best place around, DB Bistro.
