    It's late at night and the room is buzzing. Toned twentysomething magazine editors, Gastown warriors and downtown darlings are happy to get a table. Cobre is new, but word-of-mouth is keeping the tables filled at this little spot.

    Taking the best features of the heritage building in which it resides, the split-level space is naturally loft-like, with dark woods, brick walls and a proficient refurbishing of the original wrought-iron railings. Sure to appease those with subscriptions to Dwell and a taste for diversity - and really, it does - the restaurant is calculated to keep diners slightly moving along.

    Chef Stuart Irving, manager Tyson Reimer and Jason Kelly (both from Wild Rice, Bin 941 and Raintree) have brought forth a tapas dining concept that ranges from Spanish ceviche to tacqueria and tapas plates. If the boys have followed Restaurateur 101's golden rule to "Build What You Know" (a likely scenario, given that the chef’s previous status as executive chef at Wild Rice), it's safe to say that creativeness is on the agenda.

    And indeed these Spanish dishes have been explored and repackaged with flavours from Argentina, Cuba, Brasil, and Mexico. The boys realize there's money in toning down the traditional Latino cuisine's Y chromosomes. A Local albacore tuna ($12), for example, hits the table with a pumpkin seed and sundried tomato pesto, while the Cuban lobster gets the ancho papaya treatment. The diver-caught scallop ceviche salad ($12) gets not much more than a simple dash of lemon. Irving's menu, in line with his less-is-more aesthetic, is concise.

    I have no even words to express my disapointment about this place. I felt robbed and treated with disdained by the staff, specially the latino gay waiter (what an attitude!). The food took an eternity and the taste is too modern that it doesn't taste as latino food anymore. It was really a waste of time, money and energy.

    Nuevo Latio - excellent idea - Cobre - appaling execution. To start we were squeezed onto an excruciatingly small table in a throughway. The service was horrific, or waitress even scoffed at our drink choices with a cheeky comment and at 10.50 a glass for wine, the staff should be behind your choices, non? At least not openly sarcastic. Very frustrating as we waited one hour between plate one and two tables seated after us received waves of tapas plates while we waited and wondered if it was us who were being overly critical and where the heck our server had disappeared to. When plates two and three arrived on top of each other we found the short ribs tough and three minor shrimp not at all satisfying. Three plates should not be spread over 2 and a half hours. We left without ordering a coffee or dessert, we always have at least a coffee...we were still in dinner mode, we still needed a meal.

    Really deserves all the accolades. This place lives up to the hype. When I'm in the mood for an authentic fare, this is where I go. They've got a great selection of Latin American food for the right price. And the atmosphere as others have mentioned is relaxed and inviting.

    Cobre was perfect for us. We had a birthday dinner with 7 people. We ordered almost everthing on the menue. Great for sharring multiple dishes except most dishes come with 3 or 6 things and being 7 of us made it interesting who got left out of that dish. Well a few drinks later we made sure to order the dishes so we got 9 of everything. Our waiter was so good, he stopped us from ordering too much food. The manager actually ended up having a seat with us to share in some wine at the end of the evening. The decor is perfect and it's not too lound. We will be going back to load up on the chicken taquitos.....so good!!! Great wine selection too. Make sure to put Cobre on your list.

    The service is appalling, and we've experienced poor service elsewhere, but what made it so much more frustrating was that tables around us were being served while we waited. And waited. It was one hour between plate 1 and plate 2. One hour. And, whoever orders their meat needs to find new suppliers. The lamb was gristly, the wild boar mostly fat, and the short ribs tough. 2-1/2 hours and 4 plates later we decided to go home as we were still hungry and needed food NOW.
    Also, tables are too close together. We were really squished in (by the front window).

    I had heard about cobre through some friends and thought i would give it a try as i had been fond of other latin establishments...latin quarter...baru. i was amazed as soon as i walked in the room. the design is fantastic. a room of both comfort and cutting edge urban styling. i was told by our server that cobre meant 'copper' in spanish...which explained why the room has so much stunning copper detailing-- including a massive copper curve melting into the open kitchen. every detail in the room is pleasing to the eye and melds ultra modern with hints of south american antiquity. but enough about the room. the food is awesome. delicate ceviches to rustic chicken taquitos and everything in between. after sampling a gorgeous roast garlic and eggplant empanada, i moved on to a beautifully cooked skirt steak which was served sitting on top of a mouth watering chorizo hash and small caesar salad. this item, in my humble opinion will become a restuarant staple. my partner in crime had the tuna ceviche which was equally devine, followed by the most amazing and flavorful duck confit papusa i had never yet tried! duck confit wrapped in a moist corn flour pocket, served with a duck mole sauce with hints of ibarra chocolate form mexico. i will try to keep this short, suffice to say the dessert of dolce de lece is reason enough to return. great wine prices too!
