  his Gastown restaurant was meant as a neighbourhood gathering place, but turned out a little too elegant for that. Chef John Jetsen, his boy Elroy, Jordan Stewart, and Sonny Bozzi wanted to bring a different type of venue to the area (sorry, the part about Elroy is a fallacy). The three wanted to create a place that culled well-dressed diners and casual party-goers; not simply a restaurant, lounge, or bar, but an amalgam of all three.
Quickly, Chill Winston has became a hipster magnet. The décor, fun waitstaff and well-balanced drinks beckon and encourage splurges and spur-of-the-moment gatherings.
The ambitious renovation tactfully left the building's original brick walls, dark wooden bar and sliding windows intact. The expansive bar area has you feeling right at home in an Elle Décor way. Black leather couches are pushed against exposed brick walls; the room is lit by sparse and scattered points of warm light; and even the unisex washrooms are angling to grab a bit of attention.
The food isn't much different from what you’d find at a neighbourhood restaurant. However, the interior and the wine list elevate the experience, making it a great hideout for romance. Another plus is Chef John Jesten, who is constantly on display in his island kitchen where he brings his personal touch to the food creation.
The menu itself is curiously out of balance. Among the first courses, you'll search in vain for something light and refreshing; which is exactly what's needed if you're going to be indulging in the limp and fishy miniature crab cakes that accompany your drinks (if the waiter remembers to bring them). Those crab cakes, served with a lemon dill rémoulade, are the kind you might find at an office party, just a bit fresher.

I've been there three times and I've been disappointed each time. The food was good but the service was HORRIBLE!!!!!!!!!!!!!!!! The waitresses need more training. No one came to serve us until 45 min. later and the food came 1hr later.

Usually I want to scream at the reviewer: "Shit happens! Get over it! Don't you have anything better to do? Anchovies are strong ... and tiny!"
But I thought I'd share what I know about Chill Winston and issue my first restaurant web-review:
I finally visited Chill Winston. I loved it and have since been another handful of times. The food is fantastic (but sometimes slow ... I'll get into that later), the service was warm and friendly, and the atmosphere is nearly perfect. Every time I'm there, I'm surrounded by chefs, restaurateurs, celebrities ... people who are the harshest judges of the restaurant industry are regulars at Chill Winston. That tells me everything!
So why is the food sometimes slow?
Because they're busy. Because they serve the kind of food you normally find in small 60 seat restaurants ... but they serve 300 people at a time. I think people forget that.
This really is a special place that Vancouver is lucky to have. Again, great food, lovely service, and a brilliant environment.
Mr. Winston, I give you full stars.

I just came back from CW. I heard so many good things about them, but we got terrible service.....
We've been waiting for food over 45min and when we complained to waitress she said "it was just 20min. Not a big deal!". But I took a picture on my cell right after we ordered, and it proved that we actually waited over 45min.!!!
Food was good, but I don't want to pay anything for that crappy service, so I don't think we come back again.....

I have been there three times now, inside - pation great which makes it hard to not go. BUT the service - horrible. I ordered the tomato and avacodo salad - how long should that take? Not 50 minutes! Trust me this isn't the first time, I got Ribs....i was there for 2 hours. Its a great place, they just have to stop running out of food and speed up the kitchen, whats the deal?

about a month ago i decided to give them a second chance. it was a beautiful sunny day, so went for a couple of drinks on their fabulous patio. we ordered a plate of olives and most of them were soft and mushy, and a few of them tasted off. we barely ate half. then last friday we gave them a third chance and once again were disappointed. we ordered the rack of lamb and it came over done, and definitely not worth the $24 price tag, especially considering it doesn't come with anything, sides such as potatoes or veggies will cost you an extra $5 each.
the manager apologized for over cooking our meal and took it off our bill. it seems like customer service after the fact is good, but for once i'd like to go there and have a great experience, and not have a manager constantly apologizing for something going wrong.

The servers and the management are fantastic. Not overly in you face, but always there when you need them.
The bathrooms are always worth a trip......
The music is so random it is actually fun.
I love the ribs and the duck and I highly reccommend their drinks.

Went there with a group of 15 on a Saturday night. Wait wasn't bad, service was very friendly, the seating we got was a bunch of round tables side by side, even with a reservation which was sort of disappointing.
To cut to the chase, I ordered ribs and they tasted great while i was there, i was surprised at how tender they were (although they were really really fatty). 5 hours later i ended up puking my guts out. RIBS WERE TENDER BECAUSE THEY WERE NOT COOKED. That sucked.

I've been to Chill Winston's a few times with friends and have had mixed feelings. I made a reservation for a friend's birthday party, but apparently the managers over-booked and half of my friends had to eat with their plates on their laps if they even had a seat!? I've been to CW now a dozen times with different people and in different sized groups - sometimes just on a date and sometimes with bigger groups. It always seems to be perfect ... kinda like when your iPod is on random and it seems to play the perfect songs for your mood. Every time I go, the mix of people is astounding, the vibe is perfect (chill on slower days and hoppin' on busier ones), the service is great, and the drink menu is second to none.
I highly recommend Chill Winston. Very highly.
I also want to comment about the managment. They seem really nice ... one of them just grabbed an umbrella and walked me to my car and hailed a cab for a friend of mine ... he just called to say that the manager even paid for it. Really cool.

the atmosphere of this place is really great but their bar manager has a lot to learn about customer service. although i fequent this place quite a bit because i live around the corner, i had bad experience a month or so ago which has put me off.
we were there with a group of friends... around 20 of us, and we ordered 12 jagger bombs. what we got where 12 shots of yagger dropped into beer... NOT red bull. when we complained that they were terrible and asked why he didn't tell us they didn't make yagger bombs with red bull before he made them he pulled major attitude on us and said he was too bust to talk even though the bar was practically empty. i then asked to speak to the manager since he was too busy and he informed me he was the manager and promptly walked away.
he could have handled the situation a lot more professionally, by simply informing us when we ordered the jagger bombs that they didn't carry red bull, but made they're own versions using beer, and asked if we'd like to try that instead. i mean if someone ordered a cosmopolitan you wouldn't just make it with pineapple juice cause you didn't carry cranberry juice you'd tell them first.
oh and the jagger bombs were ridiculously expensive considering there was no red bull in them.
i'll probably give them another chance, since i like everything else about the place. but i'll order my drinks from the server instead.

I went to Chill Winston today after reading your review and the comments (this site is great, by the way!) I also liked it alot. Really good food, great atmosphere, cool peeps, and ... dare I say ... great tunes! And totally dig the washrooms!
Gave it a 3 for service though, because I ordered a decaf and they were out.

I actually really love this place! There isn't a more unpretentious place in town ... it's exactly what Vancouver needs. The staff is super friendly, the food (I thought) was amazing -- especially for the price -- and day or night, the room is really sexy. NO PRETENTION.
And to comment on the music ... I thought it was the greatest mix I've heard in a long time. Not boring, a song for every taste, and packed full of memories ... the music made the night (when I was there last, people were singing along to just about everything ... again, no pretention ... just fun!)

Weird weird weird atmosphere... part tourist trap, part wannabe scenester hangout. Great bathrooms, almost hit the (Balthazaar)mark on decor but the music(*distractingly horrible, loud and random) and details just don't cut it. Food is okay but usual suspects a la boring seared ahi and tomato boconcinni and frites... too bad, great service, great patio, fantastic location.
* the table on other side of us commmented on the annoying mix of John Denver, Guns 'N Roses, Depeche Mode and Neil Diamond to the server who replied "I know, it's the owners Ipod".. at least blame it on a poor satelite choice!
