he old Oasis Spa space in the Distillery District is making way for Taste of Quebec (55 Mill Street, Building 36). This specialty food boutique –more of an event space, really - is the brainchild of Joanne Thompson & Sylvain Landry, who run the eponymous Thompson Landry Gallery next door. Chef JP Chalet's (Bouchon, The Fifth), has come on board – leaving his post at The Fifth - eager to churn out a shrine for artisan cheese, terrines, patés, gourmet oils all from La Belle Province. Chalet is working on a line of his own products, and will offer tasting events on-site. The multi-use space will hold about 60 people, so expect wine tastings, cookbook launches and, with any luck, Chalet-branded product. It's the kind of place, located right at the Distillery front gates, where you might imagine homesick Quebecois holed up.
