 ight, the new wine bar in the Cosmopolitan Toronto Hotel & Spa, has swiftly taken over the space that was Doku 15. The menu, which has been crafted by Executive Chef Derek Kennedy, has taken old comfort classics and released them with a new spin. Burgers, Shepard’s Pie and Tater Tots aren’t usually items you would find on a fine-dining menu, but Eight is forging new ground.
The burgers are mini and come in flights of three. The first is a Kobe beef burger with brie and caramelized onions; the second is a buffalo burger with smoked bacon and home-made BBQ sauce; and the third is a lamb burger doused in curried mango chutney. This succulent trio goes for only $15 and is the best bang for your buck on Eight’s pricier menu.
The thought of Shepard’s Pie probably brings a knot to your stomach and memories of force-fed Christmas dinners to your mind. I implore you to shed those well-founded prejudices and try Eight’s Shepard’s Pie with an open mind. Kennedy’s version replaces the usual ground beef for duck confit in a veal demi-glace with whipped golden potatoes and 20-year-old port wine ($21).
The dictionary of a wine list at Eight Wine Bar has a revolving door, but harnesses the best wines available to pair the seasonal menu items with. Each week new wines are featured to further augment your gastronomic experience. They are sold by the 3oz., 5oz. or 8oz., so it’s convenient to try a few with your different courses. Now open. –J.T.
