Despite a formidable challenge from Ossington's popular Neapolitan-style pizza haven, Pizzeria Libretto, the Terroni empire just keeps expanding. Last year, owner Cosimo Mammoliti opened his first non-Terroni restaurant in Toronto, Osteria Ciceri E Tria, a more relaxed, market-centric alternative to Terroni. In 2010, Osteria will be joined by La Bettola Di Terroni. It never stops.
Both Osteria and La Bettola will be accessed by a single entrance, but will exist as separate concepts. The chef of Terroni in Los Angeles has been flown in to create an authentic Sicilian menu comprised of "favourites from Terroni plus a few surprises". The surprises still have yet to be revealed, but we know this for sure: it will include the unsliced, thin-crust pizza that made the franchise's name.
The design is still a work in progress, but is developing as a collaboration between Terroni's in-house architect Ralph Gianone and interior desiner Andrew De Rosa. Both "Osteria" and "Bettola" literally mean "tavern", but La Bettola will have more of a wine bar feel. From design to service to cuisine, the restaurant will be intended to get patrons in and out quickly, maintaining the bustling, crowded atmosphere of all the Terronis that preceded it. – R.T.
