Oliffe, the longstanding butcher, has increased its retail space by 20 percent and its square footage by 50 percent. As meat man Jason Teasdale tells me, the upscale butchery now has room enough to carry a breed of pig that is exclusive to them: the Tamshire (a blend of the British Berkshire and Scottish Tamworth). In addition to carrying their own swine variant, Ollife now houses a variety of prepared items, including turkey burgers, prepared with leeks, duck renderings, and elephant garlic; southwest chicken sausage, stuffed with lime cilantro and red peppers; and waygu (where Kobe beef comes from) burgers.
