A ll projects start with a vision; some visions are big, some small. But regardless of the size or complexity of the idea, the implementation of the dream is rarely completely consistent. The ubiquitous Spanish architect Gaudi was outlived by the grandiosity of his imaginings for Sagrada Família and never saw the outcome; playwright Caden Cotard of Synecdoche, New York had such huge ideas for his play that he lost himself in it. Now, I know, if you're still with me, that you might be wondering why on earth I'm talking about 19th century architects and 21st century fictional artists when I am about to introduce a new Toronto restaurant. Well the answer, I think, is quite elementary: Nadege Nourian, chef/owner of the new eponymous pâtisserie, Nadege, is an artist, pure and simple. And, so goes the story: Nadege, at one time a diaphanous notion of a Champagne and chocolates shop within Nourian's mind, is now Toronto's only beautifully conceptualized, contemporary Parisian café.
Unlike Most French cafés in the city, Nadege does not attempt to emulate a tourist's vision of Paris. Instead, Nourian came to Toronto direct from Paris, a year ago, with one angle; that is, to bring a city that fancies itself cosmopolitan, a piece of Europe that is actually cosmopolitan, and more importantly, au current. So, in other words, when you enter Nadege, don't expect the words quaint, rustic, or cute to come to mind. Instead, what you will find is a clean-lined, sleek, modern space bathed in natural light. Intentional or not, the stark, yet sophisticated, spot reads like a deep focus photograph, an homage, it seems, to the former photo studio that inhabited the space for over forty years.
Starkly designed or not, the space, filled with such magnificently crafted sweets, and smells only Proust could write of, will never come off cold or uncomfortable. Nourian knows how to keep the attention on her art. Having held the illustrious position in London of assistant Executive Pastry Chef at Michelin star adorned restaurant, Hakkasan and even refusing a position as executive pastry chef at the new location in Miami , Nourian knows how to please with her pastries. In fact, she is such a perfectionist, worried that she would not be able to properly train Torontonian pastry chefs (sorry George Brown), she had to bring her right hand woman – Laur Larrose, who also worked at Hakkasan – with her.
As for the menu, the predominant focus of course is on sweets. Nadege features handmade chocolate pieces, chocolate truffles, and petit gateaux, all built with top quality chocolate sourced and shipped from France. Nadege also has a circulating assortment of sandwiches compiled from in-house baked bread and a variety of charcuterie from different regions of Italy, France, and Spain. But the pièce de résistance is what Chef refers to as "the new cupcake," the Paris pastry trend that has taken London by storm, courtesy of Nourian herself and has yet to even reach New York. So, it appears that Torontonians are in for a treat (both literally and figuratively); the Macaron – a French sandwich cookie, first popularized by Marie Antoinette – has arrived and is going to hit the big time right here. The caché-yielding cookies are constructed out of biscuits composed of almond flour, which Nourian imports from France, and then are uniquely decorated with colourful, meringue-like domes. Whether or not the cookie will be a T.O go-to remains to be seen, but Nourian is quite stalwart in her belief of its potential for trendiness.
As for the future of Nadege it seems to me, plans for this pâtisserie only get better from here. With potential (and vague contrivances) for a cavernous, exposed brick, wine lounge in the basement and a licensed patio (as soon as the city workers get off their arrogant asses), Nadege will likely be a new Queen West haunt, excusez-moi, I mean, le roi dans La Reine Ouest. Bon appétit. – E.H

41 Reader Reviews | If you're going to avenge a macaron you might as well spell it right. The completely inaccurate description of the cookie still stands here and that is my major complaint with this article. It doesn't help that they're improperly made at Nadege and while I'm happy to support local business I certainly don't feel we should support inferior quality products. I'm not a cheerleader for mediocrity. I'd rather spout accurate bile than send people for poorly produced pastries operated by people who like to attack customers online under pseudonyms. If you feel otherwise, so be it.

Wow, I have seen some scathing reviews in my time, but some of these are positively rabid. If Vanessa is PinstripePrincess from the ChowHounds site, sweetheart, I hope you aspirate a macaroon. What would come out of you can't be any worse than the bile you're spewing here and there.
So I'll just let you know my experience: have tried many things at Nadege but it's the little cakes that get me. They are beautiful, delicate, with subtle not-too-sweet taste. I personally just ordered $400 worth of these babies for my co. christmas party this Friday. *AND* a bunch of the macaroons.
My daughter fell in love with the macaroons this summer (we live around the corner) and made a trip almost every day to pick up one or two. We've tried them all. They're fabulous. How could you not love these things?
The pastries, some as good, some not as good, as the local competition. But certainly nothing you would throw out in the garbage.
The place is beautiful. It's a look. It's not Clafouti, it's not Le Select. But it is meticulously styled and it is beautiful. So it's great. We have even *more* choice on Queen West, with a variety of experiences.
We should all be cheering. I am.

We live in the neighborhood and visit Nadege once a week (ie. we're in LOVE with this place). The staff are so sweet and the food is ridiculous/incredible. I'm a huge fan of the Pate sandwich on walnut/raisin bread and the almond crossaint brings back memories of Paris. FINALLY, a place in Toronto that gets it.

Sandwiches - delectable and the perfect size for lunch
Quiche - Awesome!!
Macaroons - Authentic and creative (beware, they don't survive a hot summer's day)
Coffee - Fantastic - I'll travel across town for it
Cakes - WOW! - These are special - She's coming out with a new series and I can't wait to see what's up her sleeve!

They are polite and friendly. The products are novel. But the service is confused. They just don't have their front-of-the-room service worked out. I ordered two croissants: one for $2.80 and another for $3.00. I got charged for two croissants for 2 x $3.00. That was because the cashier spent a lot of time trying to decipher what products I ordered. Bottom line, look at the bill and be clear on what they ring in. They will probably still get it wrong, so keep the order simple.

The bread and croissants are not that good.
The cakes was good when it was first open now not as good---
especially the chocolate cakes---you can taste the difference
and very few choices---begin to question the skills of the chef

People who think that Clafouti serves real croissants--the majority of Torontonians--will probably take a dislike to this place. The rest of us--who despairingly remember Paris every time we bite into a local pastry--are rejoicing.

If you make fun of my spelling (damn iphone) the least you could do is post with proper grammar, capitalization and punctuation. Commenting on my spelling and not disputing any factual statements in my post makes it seem to me that your post is less credible "honestly".

ok so the place is hypped by Red Box , the place loooks like a shoe store , the pastries look like corpses on a slab at the morge and taste like they have been there for a while.
She declined a job at the Fountainbleaumin Miami beach but they already have a pastry chef from France there who has a Patisserie in the Hotel , so what gives she refused a job in one of Miami's best hotels to come to TO???? she also drives a car with Nova Scotia plates ??? where is the truth???

Yup don't believe everything you read this place is beyand bad.. how can a frenchwoman not make a proper croissant? it was not even puffy and teh danish looked like it had been sat on... bad bad bad.. but what is worse is the person who wrote this article! saying that they introduced the Macaron to Toronto and it is not even in LA or New York yet!! what planet do they reside in.. Macarons have been all over Toronto for years and all over New York even longer... Do they do any fact checking at Martiniboys or do they just dream this stuff up?

It's nice to see shops opening up in Toronto with an extra 'edge', especially a pastry shop. Nadege Patisserie is quite striking, with it's modern design against a more homely surrounding (it adds to the charm). Sadly, it failed to impress after I moved on from just the physical location.
Their croissants were flat, dense, and tasted very eggy. They reminded me more of butter rolls with their shiny skin, rather than a flaky croissant. The almond honey croissant left a horrible bitter/savory after taste and the banana/coconut wasn't anything special(and the chocolate croissant was a little sweeter then i would have liked it to be). At 3$ a pop, and their size, I was hoping for something good at least. Their mini madeleines were cute but soggy and tastless. The olive oil flavor was terrible. We moved on to the macarons, which looked thin but pretty. Again, was very disappointed with the flavors. They had a nice texture with the crisp cookie and the soft filling, but the flavor was either lacking or just plain bad. The only flavour which was good was the cassis. I'm not sure why pastry chefs keep trying to combine wasabi and grapefruit, it just didn't work. The cakes looked appetizing and clean. I could only try their strawberry mango mousse due to allergies, and again, HUGE let down. I could go on and on about the products, but in general Nadege delivers in service and aesthetics, but fails completely in substance!!
It doesn't help that everything looks so damn good and professional. They have an open kitchen which looks charming as hell, and the interior store is gorgeous. So when I spend the money for the products, and is given below average goods, I'm annoyed.
In general, does not live up to the hype and the baggage that this so called 'expert' has brought to Toronto. Honestly, the whole Michelin star bit of information does not impress me, mostly just politics!

18. Jane B.'s Review :: July 20, 2009 Jane B.'s Rating: 4 Stars |
My boyfriend and I live a few minutes away from Nadege Patisserie and visited for the first time last Friday morning. We ordered two lattes, a pistachio croissant, three of those little fluted canneles and a couple cassis macarons.
First off, the latte had a really smooth, rich flavour without any bitter taste that Starbucks espresso sometimes imparts. I liked that the waitress brought our food directly to the bar where we were sitting although the sugar cubes took a little too long to fully dissolve(pretty comfortable stools I might add, and a great view of Bellwoods as we dined!)
The pistachio croissant was extremely flavourful and I really appreciated the shake up on a traditional almond croissant, although the dough could have been flakier and I could have used a couple more bites. I loved the little canneles Bordelaise which were obviously made fresh that day – so moist and rich in flavour. These were probably my favourite part of our selections and would recommend these to everyone!
As far as the macarons go, they are on the thin side of the spectrum but the flavour was amazing and I really liked that you could taste the almond in the macarons and not just a crispy meringue shell with a big air gap that "taller" macarons often have.
From the sounds of things, some of the small kinks are being ironed out as we speak but either way we were really happy with what we tasted and we’ll definitely be back to try more items.
As my first foray into blogging, this whole exercise makes me really uneasy about hearing backlash after reading all the responses to both positive and negative reviews. Shouldn’t restaurant reviews spur discussion about food rather than inciting personal attacks. Differences aside, let’s clean it up Toronto and engage in some constructive instead of destructive exchanges!

We went at the end of the day Sunday and were happy to take everything they had left. We had the most delicious quiches that were light and flavourful. The Petits Gateaux we had were excellent. They were both beautiful to look at and we felt bad eating them but were thrilled by the extraordinary flavour. The location itself was warm and welcoming with the beautiful sunlight flooding the space. We will definetly be going back.

they might do a poor job with pastries but no need to diss Torontonian tastes. the macarons are pretty sad considering they are trying to promote a storied life of experience of the baker and the other pastries aren't much better.
some of the macarons in Paris can be pretty terrible too if you don't get them from the stalwarts.
25. Vanessa's Review :: July 14, 2009 Vanessa's Rating: 1 Stars |
I have been to France more times than I can count, plus I have a French mother and many relatives living there. Saying that, I found that Nadege was disappointing. They didn't have croissants when I came in on Sunday, which is surprising for a patisserie. They had a flavourless excuse of what looked like a cinnamon bun ( I wasnt expecting a North American version at all) peppered with chocolate chips and chewy doughy pastry which was awful. No flavour at all. It tasted old. They had none of the usual standard pattisserie offerings. What they did have was sparse.
The 2 macarrons were also awful. The almond dough/cookie that holds the filling together were paper thin and not chewy or flavourful enough. I had the peach champagne and the pistachio flavours. The filling was gooey and leaky and did not balance well with the maccaron "shell" at all. The peach champagne version had no taste at all and was like eating to paper this wafers glued together with wall plaster. I was expecting something at the level of the "PAUL" bakeries which are on every corner in Paris or better, like the kind you can get at Hediard, Fauchon, Laduree, La Maison du Chocolat or even the supermarket variety available at Carrefour. The macarron was mediocre and an insult to my tastebuds. I guess they will be popular since Canadians have finally jumped on the maccaron bandwagon and love anything gooey and oozey and underbaked and unripe as long as it is loaded with butter, cream and fudgey sticky crap.
There was nothing "french" or "patisserie" about this place, regardless of the decor. I guess it's enough for middle aged yuppies, experts on Paris from their packaged vacation - with designer strollers that love reading about Paris by David Sedaris and gobble up anything labled "french" by so called experts like Martha Stewart and plump poseurs like Ina Garten.
The place is ridiculously overpriced for what you get and the cafe latte i had was horrible.
Clafouti across the street is by far better.

After reading the positive reviews on here I decided to give it a try. WTF? Is she really from France? Did they exile her for doing shame to the finest cuisine in the world?
The pastries are dry and they serve some of the worst coffee in the city. Shame on them for trying to degrade my country!

I really look at the negative reviews above and shake my head in shock and shame! After having lived six and a half years in London,U.K. and having worked for some of the top restaurants/Chef's in the city including two-one star Michelin and one-two star restaurants,it was with absolute glee and overwhelming joy that I was able to walk into "Nadege" pastry shop and have REAL AUTHENTIC MICHELIN QUALITY PASTRIES! I frequented "Yautchau" in London where Nadege was Asst Chef and loved it. Having moved back to TO I was blown away by how poor and limited the "pastry scene" was. When I found out that a shop was opening up and that Nadege was who she was...well I was over the moon! She's so cool and passionate about what she does. Shame on you people who show up to a shop (where obviously it's far above and beyond you class/palette level) and bash it. I understand that everyone's experience will be different, but at no point could it have even possibly gotten to the poor level that some people I've read have described. We as a "food city" are a joke in the world scene,we live in a city that has had blinkers on for decades, and finally someone is willing to risk everything they have on enlightening our city and help us get to the level that we should have been at years ago. And what are some people doing??? throwing their verbal diarrhea out at anyone who will listen, and their descriptions of what "it should taste/look like" are jaw dropping. GIVE ME A BREAK! Sit down,be quite, and turn the food network back on to Jamie Oliver because you obviously no piss all about food,product,true/clean natural ingredients. So please stop throwing your toys out of the pram, your making an unnecessary mess in a neat living room (or in this case,Bellevue Trinity Park).
I know I may came across very strong about this, but as someone who knows what true hard work is in a European kitchen is like, I can relate to her and what she must be thinking.....
And to all of the staff, keep up the hard work...it's paying off in folds as you look smart, act smart and put great coffee in our cups as myself and ALL of my friends in the industry have agreed upon.
VIVE LA CUISINE!VIVE LA MACARON! ET VIVE LA NADEGE!
(give'em hell Nadege,we all need it!)

I went to Nadege Patisserie this morning for my daily croissant and coffee. Having lived in Paris I was expecting the same treatment and quality since this is a french patisserie... success! The croissants were delicious, apparently created from imported real butter and not margerine (*cough* as some others do) the taste won me over.
The manager was very pleasant so I'm not sure what the negative review below is speaking about (how about you post the link to this apparent bashing? - oh and learn how to spell)

the croissants are as good as clafouti. but at half the size and 50% more expensive. oh, and I think clafouti croissants are some of the worst in the city.
as for the macarons, these are mediorce at best. they were neither decadent nor delicate. very few had the visual "footing". and the cookie was nearly indecernable from the filling.
i hope they read this and learn from their nmistakes as i hope this will one day be a nice addition to my hood.
(read on another site) why would the owners bash there customers instead of be humble and try to correct their wrongs. sad really.

After attempting to reply directly to a negative post on Chowhound and having it deleted more than twice (I guess they only want negative biased opinions) I thought I'd post it here.
I went to the Nadege Patisserie yesterday and was more than pleased with the experience. Being a resident of the area I've watching the transformation of this building for some time. The amount of work these people put in to their business is pretty staggering. I was amazed when I entered yesterday morning. It's beautiful!
The food is always the real test though.
It was INCREDIBLE. Macrons were perfectly, authentically delicious. Coffee was served as it is everywhere in Europe, ready to drink. The service was all quite friendly with me. Though it was their first day so I think some slack can be afforded. Did CHOW reviewers go in there with an ax to grind? Sounds like it. To me, this new Patisserie is a welcome addition to the neighbourhood. I hope they do well and I hope Starbucks enjoys CHOWHOUND reviewer's continued patronage.

That is the most ridiculous and inaccurate description of a macaron I've ever read (that "biscuit" IS the meringue dome). And the author might want to do a bit of research before writing such fluff.
