It's been barely a year since Toronto's most notorious chef, Marc Thuet, rebranded his flagship Thuet restaurant as Bite Me!, but already the space has gone through its second transformation in just two years. It's a radical reinvention to say the least. Now called Conviction, the restaurant is staffed entirely (with the exception of Thuet himself and his wife/business partner Biana Zorich) by ex-cons, both in the kitchen and at the front-of-the-house. Thuet, who himself has battled substance abuse and other left-of-the-law tendencies, is giving these former criminals the second chance that so few will provide.
If this sounds like a reality TV show concept, it's because it is. Cineflix has been shooting the process for City TV and will air as part of a behind-the-scenes documentary series about Thuet and Zorich. With Thuet's high-profile and over-the-top personality, it's kind of a surprise he hasn't taken to the small screen already.
Originally Conviction was planned to take place in an actual penitentiary, but due to security risks, Thuet was forced to find other means. Sacrificing his own restaurant to the concept can only be seen as a noble act, even if the whole project has "publicity stunt" written all over it. As for the cuisine, it continues Bite Me!'s march towards recession-friendly "modest gourmet" fare, with dishes like Spaghetti alla chitarra with yellowfin tuna and mentaiko, Pit-roasted Mennonite capon with sourdough and arugula salad, and Pork Belly pizza with roasted peppers and goat cheese.

here is another toronto restaurant that is garbage ,
chef is lost , his wife has no idea of whta the service industry is about ,
close up and lets hope one day some good restaurnteur opens up and we can have a decent meal at a decent price
no wonder to enjoy a good meal canadians leave the country

I was today about 10.00 am in your place at 1 king west , counter had few sandwiches ,
I specifically ask if they are fresh .
Answer was ---yes , they made today .
When I tried bread is steal and not crispy .
For about $ 8 dollars at least you can serve fresh products .

My wife and I had a delicious dinner there - food was spectacular to say the least. We came into the restaurant without a reservation, and they were kind to accomodate. However, what they failed to mention to us was that they needed to kick us out after 1 hour -- and this news came only after we had ordered dessert and a second glass of wine. I'm sorry, but isn't this restaurant management 101. I know the staff are ex-cons, but are the owners new to the restaurant business as well?? They offered to move us (and our wine and dessert to the bar), but there were no seats at the bar. What I found odd was that they didn't offer us a temprorary seat at one of the few empty tables until the bar opened up. They also dumped our glasses at the bar, mixing up our drinks, and then an over eager cleaner took our dessert while we were waiting for a bar seat. The chef's wife (who charges around the restaurant like a loud horse) walked by us several times and said nothing. She seemed more interested in publicly intimidating the staff than providing a positive atmosphere -- just a tough looking woman, not a warm hostess. We did get our second glasses of wine and dessert taken off the bill, but only after I asked -- they never offered us anything themselves. Guys - "sorry" doesn't cut it when you mismanage your restaurant. Money talks. I will not be going back, no matter how good the food is.

Not bad as a pre-theater dinner. Great food, great sangria. Everything was well done in a low key atmosphere.

This was a good, hidden restaurant, back in the day. I took clients there for dinner, and was extremely impressed with the food, the service, the ambiance and the overall experience. But, more recently, the place is a dull atmosphere and the food is sub-par. Shan't return.

Odd restaurant, really. The food is confus(ing)/(ed) and just seemed really dated. When they started serving us someone else's food, we started to get embarrassed. When our plates arrived, things just got worse. Gordon Ramsay would have a friggin field day.

I think some of you people must be either crazy or eating somewhere else!
My wife and I had dinner there last week and it was a great night. Service was very capable and warm with a great atmosphere. We ordered a $55 wine from Alsace which was fantastic. The food was excellent - and stands up very well compared to the other top restaurants in the city. The concept may be a bit of a gimmick, but the food is for real.
We're looking forward to going back (and watching the show this Fall).

Awful, awful service, lukewarm dinner, 2 hour wait for entree, no apologies, and no reply for the email complaint.
The Antipasto was amazing, no doubt.
From the time we were seated our appetizer for two took 30 minutes to arrive, the soup and salad an hour and a half, and the entree arrived at 2 hours and 20 minutes to our table.
The entree, although it looked that it was prepared with the greatest care, was lukewarm and by the time it came we were already lost our appetite. The experience of good dining includes the food arriving with reasonable intermission. We have spent 3 hours having our dinner, not by choice but because we felt kind of trapped. THere was no way to leave 2 hours into this experience without creating a more unpleasant situation by asking for the bill and refusing to pay for food that we did not consume.
When receiving the check at the end of the night, there was not a single attempt to try to make it right by showing some sign of remorse, apology, taking some responsibility by offering to pick up the the charge for the 2 glasses of wines or the appetizer (which we would of declined). Obviously the restaurant had nothing to loose by providing such an awful experience with long wait times and lukewarm entrees at full price.
I have sent an email the very next day to Conviction. A month gone by with no reply. I am happy to report on the other hand that I have already talked out 4 set of people to go there. I done more for Conviction, then they did for me. I've given them the opportunity to least explain what went wrong, but they do not give a beep. I assume this is exactly how they feel about all of their guests, so AVOID THIS PLACE!!!

The food was good, the atmosphere was great, the service was good, if somewhat pushy. But beware the fixed menu. I would possibly go back, but I'd be sure they were serving from their regular menu first.

We ordered their $150 wine. Because I wasn't all that impressed with the wine, the waiter decided to ignore us entirely for the rest of our dinner. I literally had to flag down another waiter to give us our check. We spent $300 on our meal, I think some professionalism is requested if not required.
Never coming back in ever again, unless someday I feel compelled to vent to the manager for 3 hours of my horrid experience.

Still a bad location and July is rather slow on that stretch as dinner is at best a sometime thing, and the local area dwellers will pop in for the gimmick-ey convict thing, but that will be a one-time visit. Give it up, Marc.

My husband and I both had the tasting menu. I got the wine pairing with it but I would recommend not getting the wine. Although the pairings were excellent, I was too full from the food and the wine made it worse. Had I skipped out on the wine like my husband did, I would have been fine but because I had about 6 glasses of wine I nearly threw up after dinner. Otherwise, a splendid evening.

Overall, huge loss. 2 hours to get our food. Stale bread on our burgers, a waitress with an attitude. Bottom line, bad attitude with average food at best. If your looking for quality and service, with a fun environment, look elsewhere.
