BarChef opened quietly on Queen Street West one cold night in early December, 2008. There are lanterns along one wall, old-school things out of a Sherlock Holmes book; black-and-white damask-printed couches; birch-printed wallpaper; a chef's table underneath a glittering, icicle-like string of lights. It's relaxed but sophisticated; it's got a grace that is rare in a restaurant or bar, where it can be one thing (elegant) and you can be another (in my case, a total schlub) but you still feel entirely comfortable.
This is partly due to the owners' charm. Frankie Solarik, barchef extraordinaire, and Brent VanderVeen, general manager and sommelier, co-own BarChef, and are clearly passionate about what they are trying to accomplish.
 "The whole reason we opened BarChef is to re-create a cocktail culture in Toronto," Solarik tells me, as he mixes me something mysterious-looking. "To raise the bar on the quality of what's being offered."
And raise the bar (pun intended) they have. The first thing Solarik puts in front of me is the BarChef Martini Three Ways. Served up on a rectangular plate, it consists of three tiny glasses each slightly less than a shot and two of those spoons you use to eat soup with in Chinese restaurants. From left to right: Exquisite vodka with green olive 'air'; a spoon with rosemary and green olive puree; vodka with a single olive; a spoon with one of Solarik's signature 'raviolis' with a fresh sprig of rosemary; and vodka infused with rosemary. I'm told to start in the middle, with the olive and vodka, to get my taste buds going. Once I've warmed up, I move on to the green olive air, which is a foam-like substance that melts in the mouth, while the flavor lingers. It's like moving in for a close up: here is the big picture (green olive and vodka); now here is the detail (the olive.) I'm already impressed by this cinematic trickery when Solarik encourages me to pop the ravioli in my mouth, tilting the spoon like you tilt and oyster. The ravioli is about the size and shape of an egg yolk, and looks like it has the same gloopy consistency. But once you bite down, the thin, gelatinous skin bursts on your tongue, releasing a thin, flavorful liquid.
There's a sense of play behind Solarik's concoctions. The BarChef Rocket, for example, is comprised of raspberry vodka, curacao, fresh lime, lemoncello, and pomegranate seeds, with an effervescent sugar citrus rim. The drink is divvied up into three distinct colours, like the popsicles you used to get from the ice cream van when you were a kid, although BarChef's interpretation is red, lime-green, and olive-green. It even tastes something like a rocket popsicle, but along with the sweetness is a complexity not found in the ice cream van.

The real draw here are the drinks. I contend that barchef serves some of the finest cocktails in town, and I'll put barchef up against any bartender I know when it comes to an old-school martini. Frankie's are the best, hands-down. I think I have a crush on him just for his skills with a shaker.

Ladies...DO NOT GO TO BARCHEF!!! Yes Frankie does make a mean cocktail, but the event coordinator Brent is completely discriminatory toward women. A friend of mine booked a party there via e-mail and when she went in to confirm and work out details, he said that it was no longer available. Being a little skeptical, we had one of our male friends to call, and inquire about a booking, of the same size on the same night, with the same Brent. We weren't really very surprised when Brent said yes to him, until our male friend mentioned my female friend's name, to which Brent replied "No, she vanr' have her party here." He then went on to say that she asked to many questions about the venue. The last time I checked, it's the job of an event coordinator to answer questions and their venue. Anyway, I was disgusted by the poor service, and the double standard carried out at BarChef, and I will never be returning, and I suggest you do the same.

I went to BarChef on Saturday and was really impressed. Friendly and knowledgeable staff that care about the clientele. The service was excellent and the drinks were really really good. I was a little sceptical when the waitress kept saying the drinks were âmade from scratchâ but you completely understand once they come to the table. You can taste the quality of every ingredient in their drinks. This is the type of establishment that Torontonians should be supporting. Great service, great quality of product and (I forgot to mention) the ambience was great too. Funky décor. Iâll be going back!

AMAZING! the drinks are quite innovative and the staff are the most hip people I have come across. I definitely recommend any of their drinks and especially on a non-busy time (some drinks take a while)!

Barchef cocktails rock, and naturally the drinks list is mind-blowing. We wouldn't expect anything less from Brent and Frankie, who definitely deserves a toast for this tasty addition to our drink-culinary scene.

Tired of standing at a bar with boring vodka/soda in hand, this Torontonian gives kudos to Frankie & Brent for driving home the concept of sophisticated consumption. Great ambiance & an amazing cocktail list, Barchef is an incredible addition to Toronto's nightlife.
While everyone may not enjoy every cocktail on the list (but why wouldn't you?), you must at least appreciate the time and effort that Frankie has taken to come up with such interesting creations. Come on, people, be adventurous & try something new!
These are not drinks to throw back and forget about. With ingredients such as coriander, roasted lemon & muddled ginger, Frankie's cocktails are meant to savour and inspire conversation. With Sweet, Sour & Savory styles of cocktails, there is something to please everyone. And Frankie's Molecular Gastronomy-inspired cocktails? Out of this world! Just try it!! You won't be disappointed!
Barchef is the hottest concept to hit Toronto right now, and this is only the beginning. Congratulations again to Frankie & Brent; I look forward to introducing many friends to your incredible establishment!

For me, BarChef has been hit or miss.
One time, I can remember going with a huge group of my co-workers after a company party, being pretty drunk, and watching people make all sorts of bad decisions. It was an awesome night and the BarChef boys were rocking.
Other nights are rather drab. So it's a wild card.

It seems the only people who write on these forums are the owners and staff. The food was passable to say the least, and two of the martinis made me throw up a little in my mouth. I have been back in toronto for a few months and have to say i should have stayed in chicago where chefs know how to cook and bartenders can mix a drink...
stick to what you know toronto, timbits and double doubles.
