hat do you get when a lawyer, an architect and a chef open a restaurant?” Seymour Burton starts off sounding like a bad joke, but the collaboration between these three powerhouses has produced a neat new East Village eatery despite the laws of attraction. You know, territorial alpha males killing their competition and whatnot. It always has been better business savvy to join them if you can’t beat them, right?
Chef Josh Shuffman and chef/lawyer Adam Cohn have created a menu inspired by their previous positions at Sullivan Diner, Home, Washington Park, Barbuto and London’s River Café. Out of the ordinary fare like crepes and caviar, or brisket with kasha varnishkes decorate the eclectic American menu.
Adam Kushner has made use of his architectural eye in the decoration of Seymour Burton. The open kitchen looks out over an enormous communal table that gives the place a warm, conversational vibe. Seymour Burton is an amalgamation of Cohn’s and Kuchner’s daddy’s names.
The bloodline runs deep at Burton from the décor to the moniker. Take your Daddy out for Father’s Day. –J.T.
