Though it may be a bit wacky that a native Japanese chef is currently touted as heralding the development of nouvelle-Chinese cuisine, Chef Yuji Wakiya is Ian Schrager's pick to open up shop at the Gramercy Park Hotel’s new resto.
Introduced to Schrager via Master Chef Nobu Matsuhisa (yes, THE Nobu), Wakiya had almost made the move a few years previous to the Bryant Park Hotel. Wakiya’s Chinese culinary style incorporates the presentation of French cuisine with the minimalism of Japanese fare to pare down the typically mammoth serving of Chinese food that is heaped onto a plate for service.
This refined and stylistic approach is what has separated Wakiya from the pack and allowed his career to flourish not only in Tokyo, but now in North America’s restaurant capital as well.
