 arco Canora and Paul Grieco, former chefs at Gramercy Tavern and Craft, have started fresh with a new restaurant and a new way of thinking. The main focus at Hearth is hospitality, which according to them is not equivalent with good service. Good service ensures that everything that you would expect is done; hospitality ensures that they do even more than that, exceeding the needs and expectations of the patron. Most people want to feel comfortable when eating out as a substitute for cooking, so this philosophy really works to Hearth’s benefit.
As for the food, it’s American, but with an Italian accent, much like Mario and Luigi. The food is slightly incongruous with their down-home hospitable atmosphere, but this isn’t necessarily a bad thing. Nothing is simple; don’t expect a big ol’ slab of meatloaf. You’re more likely to find an elaborate and subtle lamb dish, or something along those lines. Wine-lovers are covered too; they’ve got an extensive list of fine vinos.
