  ccording to Patsy Grimaldi, there are three things that make a good pizza: quality ingredients, know-how and a great oven. Grimaldi should know, he started making pizzas at his uncle's pizzeria in 1941 at the age of 10. At Grimaldi's, the pies are made to order using fresh mozzarella, basil and dough and baked in a coal-fired brick oven that reaches temperatures of 850F. Unfortunately it is now illegal in Brooklyn to build these ovens and so efforts to recreate Grimadli's world-famous pies, has failed.
