ard mansion was once a hub for politicians and aristocrats alike, housing countless soirees, and elaborate diner parties. Now,
Gilt Restaurant, host of night upon night of different kinds or dinner parties, uses the palatial setting to its advantage. This double Michelin-star-toting restaurant, set within what is now the hotel New York Palace, has a menu that correlates with its surroundings perfectly Villard. Gilt's classic, yet modern, cuisine is a perfect compliment for the restored cathedral ceilings, gilded walls, carved moldings, and coruscating mosaics.
The menu, designed by head chef Justin Bogle, represents a new American Cuisine, with hints of the past. Culinary gems on this card include: spot prawns with saffron, cauliflower, smoked raisins, and capers; Foie gras with pancetta, kumquat mustard, candied black olive, fennel and pine nuts; waygy beef with artichoke kimchi, sweet potatoes, brocolli, and natural jus; or, squab breast with smoked almonds, foie gras, cabbage, parsnips and sherry.
The food and surrounding at Gilt make you feel like a queen for the evening, but I can't promise that the food is guilt free. – E.H
