    Chef Angelo Baggio has co-owned and cooked in several swish restaurants around town over the last few years, including Alto Palato and Primo et Secondi. Salute, which opened to little fanfare on a restaurant-packed block of Laurier Avenue in late 2008, is the first restaurant Baggio solely owns.

    Chef Baggio holds down the kitchen, alongside Chef Spyros Sanidas. The cuisine is French with an Italian flare, or Italian with a French flare, depending on how you look at it. They aim to change the dinner menu about once every one or two months. The lunch menu is simpler and more efficient.

    At the time of writing, Salute's dinner menu included items such as salmon tartare, made with a mix of fresh and smoked salmon, oven roasted tomatoes, and a poached quail's egg; beef tataki with roasted yellow and red beets, baby chickory greens, and French shallots mustard dressing; and a homemade foie gras torchon with poached sweet wine raisins and grilled brioche bread. Pan-seared scallops come with cauliflower purée, and sautéed buttered shitake in veal jus; a tart with oven backed roma tomatoes comes with onion jam, goat cheese gratiné and pesto oil; and homemade porcini stuff ravioli's come with natural veal reduction, foie gras au torchon and truffle oil. Pasta options include the Italian flair pennone, with seasoned sausage crisps, heavy cream, goat cheese melt, rapinis, and truffle oil drizzle, as well as a tagliatelle with sautéed shrimps, baby scallops, bokchoy, and coconut-cilantro curry sauce. A paella-style risotto comes with calamari rings, shrimps, mussels, chicken, chorizo, green peas, and zafferano.

    From the sea, salmon is grilled and served with lime and marscarpone risotto, asparagus and a parmigiano emulsion, while a lobster lasagna is made with spinach, white asparagus, and a lobster bisque ginger sauce. Duck pink breast is seasoned with smoked salt, braised Napa cabbage, and ginger and honey sauce.

    Love the food and service at Salute but the noise level approaches intolerable at peak hours. A conversation must take place at full shout. Not sure what can be done about that.

    We ate here once before and had a pretty lousy time, but decided to give it another chance because the food was very good. We still don't much care for the room, but the food was even better; our waiter, was outstanding and very knowledgable about the wine list.

    Hi my name is Philippe Chin, and i work at Salute as a Maitre d.
    I would normally not write anything on a board like this but i just happen to come on here by curiosity and fell on mr Terrence Gordon's review. I like to read other s comments its interesting because anonymously people will say things they hold back face to face. Regarding you re statements on how bad the service was, I am deeply sorry we didn t make it up to your expectations. I have worked very hard in my life with long hours and i am passionate about my work, most of the times it shows. But sometimes, under certain circumstances you can fall on a bad service, from the dinning room or kitchen point of view. Anyway, i will not go on that, but considering the date you wrote your review i have looked over the reservation book to try to locate your visit, and i find it hard to believe that plates were sitting empty on the table, maybe one of the person at the table wasnt finish on his/her plate, and that is a rule not too clean a table before everybody s finish. It is strictly impossible that you re plates were left empty for half an hour, sometimes 5 or 10 minutes(once everybody s finnish, to give you a break).You also need to consider that if you decide to go out to eat at a restaurant on a saturday, you have to know you are not the only one, and things to take a bit longer and service might be diluted a bit. Anyway, i ll leave spacce for other reviewers, and it is good to see reviews, good or bad, it makes us want to surpass yourself.

    The service was terrible. Sat down to eat at 8pm, did not leave until 11pm. Normally don't mind not being rushed out of a restaurant but we were essentially ignored for much of the meal. Appetizer plates sat empty for at least a half hour before being cleared. Ordered bottle of wine but glasses not filled up regularly. Everything took an incredibly long time to come out of the kitchen with no explanation from our waiter. For the prices and the quality of the food (which was good but not great), I would not return to a restaurant with such poor service in a city fully of good restaurants. I think this restaurant could do well if it lowered its prices and improved the service.

    We had a great time at salute. The food was amazing and the service was perfect without being too overbearing. The ambiance is attitude-ish but comfortable and bright and well-lit room. Good for a celebration or special event dinner.

    You say the food was bland...do you mean the flavors were subtle and perhaps balanced or harmonious ( don't forget umami )

    Everything was just fine.

    I describe this meal to others as "technically interesting." Every dish seemed impossibly complex, with unusual preparations, ingredients, and presentations.

    There wasn't one dish from the entire meal that I still think about. An utterly forgettable culinary experience.

    The service was outstanding.

    Salute has a great nostalgic feel to it... vintage, elegant, and jazzy. The food has been excellent the handful of times I've gone... delicious classics updated but not so much so as to be trendy or unrecognizable.

    Excellent service, good ambiance, pretty good food. I wasn't blown away by the food, visually it was interesting, but nothing was special in the flavour department. In fact I'd go so far as to say it was all a little bland and boring.

    I'd give salute 3.5 stars if I could. Definitely expected more from this restaurant.
