Pop is still very young and developing its own ambiance. It lacks the social sexiness of great wine bars and its Danish inspired décor – although intriguing – is somewhat boring; think circa 80s Volvo. The wine, food, and service however, are first rate and will undoubtedly help spread the word. So the odds are strong that Pop will age pleasantly with time. - M.L.
