
candinavian style melds with a sprawling selection of wine inside bistro Laloux’s adjoining brethren, Pop. Open for business since June, Pop wasted little time in putting its organic wines, pungent cheeses and tasty apps to the test on its developing menu.
Clean and sharp lines define owner Jean Duval’s homage to Danish interior décor from the 1940s to 1970s. So passionate about his collection, Duval spared no indulgence in decking Pop’s interior with many of his own Danish antiquities; bowls, bookshelves, ice buckets, fruit trays, and green, yellow, and teal vases are all meticulously placed inside Pop. Meanwhile, a jazzy soundtrack, matted hardwood flooring, a marble bar-top, and logo encrusted wine glasses add some much needed panache.
Frequent adjustments to Pop’s wine list will surely keep customers’ taste buds on their toes. For now, biological wines from Rhone, Provence, Venice, and varying regions of Spain all are integral parts of the list. Organic wines will continue to cover most of the menu as they are sulfite-free and thus, project a stronger natural flavour.
