Game lovers will appreciate chef/owner Marc de Canck’s baby rabbit in a Guinness sauce, an American nouvelle cuisine style dish. Fish lovers, on the other hand, must try the Arctic char, perfectly smoked and served with deer sausage. Want something more exotic? Try a dish of sweetbreads and chorizo in a sauce dotted with red peppercorns.
Other options include the Marbré de foie gras, ris de veau et pintade salade de mâche et sa vinaigrette à la truffe ; Le surf and turf de boudin noir et langoustine ; Émincé de côte de veau de lait fumée, sauce aux morilles.
La Chronique features a wine list consisting of almost 250 titles that can be ordered by the bottle or by the glass. It's time to learn a new side to French cooking.
