 nyone who has lived through the now-regrettable Ricky Martin craze of the late 90s can tell you that "Vida" means life. The name perfectly fits the new restaurant set to open in early Fall. As part of the billion dollar Fontainebleau renovation, the restaurant is aiming to signal a reinvigoration of Miami Beach's dining scene. Not only is it giving new life, but the restaurant will also be full of life, bound to be a busy spot. Of the 11 new restaurants, Vida will likely be the most casual, but hardly the most relaxed.
The design will feature a grand open kitchen fitted with a rotisserie and hearth ovens. It's there that the restaurant will crank out delicious pan-American cuisine, a combination of influences from California, Florida, Mexico, Peru, Brazil, Argentina, and the Caribbean. It sounds somewhat all over the map, but I trust that it will all come together in an ordered fashion. Finish it all off with a freshly-baked pastry or a signature soufflé.
