The eleven bars and restaurants that have opened in the newly-renovated Miami Fontainebleau resort run the gamut from Italian to South American to Japanese. Solo, however, operates to serve the sweet tooth. The café offers a selection of exceptionally made cappuccinos and espressos that would put Starbucks to shame, but that's not the main draw. Solo also serves breakfast pastries, lunch pastries, dinner pastries, and in-between-meal pastries.

But it isn't all pastries all the time. That would be preposterous – there's also cake. Award-winning pastry chefs Jean-Marie Auboine and Sylvain Bortolini create the cakes that have been synonymous with Fontainebleau since 1954. That's a lot of years of cake. You'll have trouble laying off, but if you're going to hit the pool later, you may have to restrain yourself.
