on't confuse this Pardo's with the twenty-year old Peruvian chicken chain set to roll into Miami in the near future. For now, this Pardo's stands on its own, quite literally in fact, in a destitute area of town where dead-end streets will surely have you reversing several times before you finally find the place. Once there, indulge in the house specialty
pollo a la brasa, chicken rolled in spices and cooked on a spit. There's also
yuca frita a la huancaina, fried cassava stripes served with a cheesy dipping sauce that will beat your plain old French fries any day. The
Especial de Brochetas, arrives with a selection of beef and chicken skewers served with corn on the cob and chicken chicharrones. For dessert, try the
suspiro a la limena, a caramel custard topped with meringue. It may be a little tricky to find, but its worth it.
