Everyone who as ever been to Calgary’s Farmer’s Market and has even the faintest bit of Marcel Proust’s favorite sense – smell – knows about the Phil and Sebastian Coffee Company. That said, what everyone probably does not know about this environmentally conscious duo is that a new 1500 square foot store is in the works for them in Marda Loop.
Not only will the new coffee-drinking haven serve fresh roasted, free trade, Guatemalan coffee but they're also working on a food program with chef Eric Giesbrecht (formerly of Catch Oyster Bar and Seafood Restaurant, and are installing a "Cupping Bar" to hold eventual daily coffee tastings.
Sebastian Sztabzyb & Phil Robertson have enjoyed the benefits of selling over 1100 cups of coffee in an 8 hour day and are now primed to set up shop. - R.T.
