    Everyone who as ever been to Calgary’s Farmer’s Market and has even the faintest bit of Marcel Proust’s favorite sense – smell – knows about the Phil and Sebastian Coffee Company. Having said that, even if you have a great sense of smell, it doesn’t guarantee that you sniffed out this news: The environmentally conscious duo now have a 1500 square foot store warming and waking Marda Loop.

    But the coffee brought to you by Sebastian Sztabzyb & Phil Robertson is not simply meant to elevate your mood after a long day working but meant to heighten your sense of the magical bean altogether. Phil and Sebastian have developed quite a relationship with coffee since their company's inception in 2007. Their mission was, as Sebastian states, "to pursue the best raw product (i.e. green coffee beans) and take a relentless journey towards roasting it properly to fully highlight the coffees innate individuality."

    Of course, Phil and Sebastian don't expect all their patrons to "get" coffee to the extent that they do, but they do feel that every cup should tell a story. And with beans that are purchased directly from the farmers themselves, the connoisseurs keep tabs on all aspects of growth, environment, etc. Eventually this knowledge is imparted to the customer: coffees are not labeled according to the typical light, medium, dark roasts but according to the farm from which they sprouted.

    Still, the intense focus that Phil and Sebastian have on their coffee is not lost on their food. Having established a food program with chef Eric Giesbrecht (formerly of Catch Oyster Bar and Seafood Restaurant, the menu, as part of the café's dogma, aspires to using as much locally sourced ingredients as possible. Quinoa salad, homemade soups, and in-house roasted turkey and lamb sandwiches are just a few samplings of a card that is admittedly quite impressive for a simple coffee house.

    Though Phil and Sebastian's M.O is to educate the coffee drinker and to elevate one's perception of the coveted liquid, the environment – a tasteful blend of rustic and urban aesthetics – by no means reeks of elitism. Actually, the clean, organic look of the space conveys the Phil and Sebastian model unobtrusively to the patron. And though the duo "believe that coffee will one day be viewed with the respect that wine now enjoys," they're not pushing anything. The concept will slowly sink in and eventually, like a good cup of Joe, open their customers' eyes. – E.H

    Spectacular. After living in Europe a few years I was tremendously disappointed with the coffee scene back in Canada till I stepped in here. Though there were some high priced specialties available, most of the drink menu was about the same cost as starschmucks and that other one.

    I'm actually quite disappointed with the fact that the author of this article has not done their research. I say with great authority that even though Chef Eric was the consulting chef on this project, it is actually Chef Darren Debergh from Rush who is putting in the hard work to keep the food program running.
    I believe the author should give credit, where credit is due. In this case, some credit should be given to Chef Darren.

    I visited Phil and Sebastians on the weekend for a change of pace from my usual weekend coffee haunts. The latte was good but the one thing that really stood out was the noise level. The decor is inviting but with the shape of the space and there being only hard surfaces it was not a great place to sit and have a conversation. I tried it again this morning and was surprised that I couldn't buy a large brewed coffee (even though it's on the menu and there were large cups at the till?). Instead I had to have a large Americano ($4 and tasty but not what I went there for). I think Phil and Sebastains may be a place to visit every once in awhile but not on a regular basis for me.

    While it was quite busy on saturday morning the espresso was fantastic, much better than the industry standard of starbucks, and less expensive than the coffee from the aforementioned big chain.
    Tasteful Decor, great coffee, interesting people. Will definitely be back.

    Love the place. Great addition to Marda Loop. Lots of seating, clean, great food, bright, call your name when your coffee is ready, and run by people who care. So much care and attention goes into the whole experience. I'm happy to pay a bit more for my coffee to have all this over and above a coffee chain coffee. Thank you and kudos to Phil & Sebastian.

    We were disappointed that when we arrived this morning at 11:00 a.m., the place was completely sold out of muffins/croissants/sweet treats. Not sure how this happens...

    The butternut squash soup and roasted turkey sandwich were excellent if pricey.

    Not sure if I'll be back...

    An overly priced, way too watery, latte invasion in my mouth.

    A little bit pricey here, but I like the staff, the atmosphere, the crowd, and the muffins and stuff. In particular I had a... I think it was a Quinoa salad. It was so good that I didn't mind paying $7.99 for it! And unlike certain nearby cafes, they don't screw up my order every. Damn. Time.

    I stop at P&S every morning for an overpriced cup of coffee. (Three bucks! Wait, do I sound old? Crap.) It's one of my favorite places, despite the fact that the baked goods are just pretty good and if you don't get there before 8 there's a long line full of idiots ordering lattes.
